The Renaissance Chef's Apprenticeship Program
The Crossing at Casey Jones is pleased to announce the establishment of The Renaissance Chef's Apprenticeship Program at our facility. This program, certified by both the State of Maryland and the American Culinary Federation, will provide the graduating student with a thorough and detailed education culminating in the receipt of certification as a Certified Cook. Upon completion of this status, further work and testing will allow the Certified Cook to obtain status as a Certified Sous Chef. This certification is a recognized achievement throughout the United States as it is overseen by our industry's largest and most credible governing body, The American Culinary Federation.
The Renaissance Chef's Apprenticeship Program is designed for the student passionate about receiving high-level and thorough training in the culinary field, allowing for a successful future in the field while allowing the student to earn while they learn. While degrees at various culinary institutions may cost up to $48,000.00, the candidate completing the 6,000 hour Apprenticeship Program is scheduled to earn $48,000.00!!
Make no mistake, the Renaissance Chef's Apprenticeship Program is also designed for the committed student, one who understands that this program requires commitment equal to that required by culinary institutions or colleges. The 6,000 hour program is designed to be completed in three years. This means each candidate will work a forty-hour work week over fifty weeks during the year. But this does not represent all of the work involved. The successful student will also be required to take 192 hours of related instruction during each year of the Apprenticeship Program. For the convenience of the student, these courses are offered on the internet through The American Culinary Federation. Tuition rates vary based upon the classes. As in any post-secondary level education, hard work, dedication and lengthy study are all required. The successful apprentice will be able to manage their time and be undeterred by constructive criticism and pressure.

The Renaissance Chef's Apprenticeship Program is a detailed, three-year program blending 6,000 hours of detailed and organized on-the-job training with 576 hours of related classroom instruction. Below is a description of the related instruction classes required in each year. According to American Culinary Federation guidelines, "time spent in related instruction shall not be considered as hours of work unless the apprentice is required to attend to classes during regular working hours." The internet offers the candidate a great deal of flexibility to learn and study on their own schedule.
